If you don’t yet have an Instant Pot, you need one, everyone needs one! They are amazing, and will inspire you to cook even if you don’t like cooking. Fortunately for all who know us we love to cook. So the fun here recently is seeing how we can make our favorite dishes even better. Mexican rice is a pretty common dish around here but we experimented and made it in the Instant Pot today
. I got such rave reviews I thought I would share. No pics, so sorry they ate it too fast. It is pretty simple though.
The other day we made chicken broth, so I already had that, Here is what we do.
1 onion diced, 2 cups rice, and about 4 T olive oil or coconut oil, put that in the pot on saute stirring gently until those onions are transparent. Then add 1 can of tomato sauce and 2 cups of shredded cooked chicken and 2 and 1/2 cups of chicken broth. Add some mexican seasoning, we like one called Fiesta Mix. Put lid on and press the rice button. When done manually release the pressure and serve. Usually when we make this is a skillet we add cheese on top, but this was so good we forgot. We also forgot to top with a dollop of sour cream. Did I say it was good? It was really good! Next time I will add some jalepenos.
