I remember as a child being at my grandprents home and them always serving sliced onions and tomatoes and cucumbers with every meal. And I remember in our house growing up during the summer always having a big jar with pickled goodies in it that we would take from and then replenish. So it is with fond memories that I share about our pickle jar. Doing things that remind me of home (as in feelings, not houses) is what makes my home a haven. Now, onto the pickle jar.
We use a one gallon wide mouth jar, I fill about 1/3 with apple cider vinegar and about 1/3 water. Then the fun begins, I add about 1/2 cup of cajun spice and then anything goes! Several cloves of garlic, some thickly sliced cucumbers, several hot peppers, fresh okra, some sliced yellow squash, any green tomatoes that fell before their time, and lots of sliced onions! As much as I can stuff in that jar. Keep it refrigerated and give it about 2 days or so then put it out at each meal and the fishing begins! Fish out whatever you want for that meal and keep replenishing daily from the garden. The longer it sits the better it tastes, just keep it in the fridge. I would haved loved to have gotten a picture with the jar full, but they eat it as fast as we fill it!

I love that idea! That is such a great way to use up odds and ends from the garden (and the vegetable bin) without letting anything go to waste.

Could I use white vinegar in part or instead of apple cider?? My kids are not as fond of the cider flavor. Thanks for this post!

This is one of my favorite memories from childhood, and we still do this every summer. 🙂
I have 4 jars of pickled “stuff” in the fridge right now, and we do the same thing, put it on the table at supper and fish yummy veggies out of it. When it gets empty, we just add more stuff to the liquid. 🙂
