super simple salsa

We always make homemade salsa and in fact that is half the reason we grow a garden. Here is my super simple technique. It will take a bit longer if you don’t have a food processor, but just get a friend to help you chop. close to home vacation

Sometimes the best vacations aren’t so far from home. Sometimes they are within a nice driving distance. We still have yet to visit the Smokey Mountains and we have lived in TN nearly 20 years, lol. Probably about time. But a t the other end of the state is Memphis and from what I hear from the Memphis-savvy travel guide there are plenty of great things to do there. I am anxious to enter to win a trip package . I want to check out all of the resale shops. And all of the great outdoors activities like the Shelby Farms Park and the Wolf River and especially the Mud Island River Park. But then again I would really like to see the Main Street Trolley Attraction, I remember seeing one in San Fransisco many years back. As for the trip I can win, I think my family would love the Carriage Ride. Of course anything with horses would thrill them. But really I had no idea there was so much to do there. Our oldest daughter and her hubby took our grandbaby to the Zoo there recently just as a day trip but they really liked it.

My Simple Woman’s Daybook … July 27, 2010

this is one of my favorite parts of my blogging week, it keeps me focused, I have way too busy a week going usually so it is nice to just sit and ponder for a few minutes, today is no exception

Outside my Window … cloudy with the sun peaking through hope it will soon be raining

I am thinking … about how much I need coffee

I am thankful for… the rain, we need it, hoping we get more today

From the kitchen … only coffee so far

From the learning rooms … starting up a new year

I am wearing … t shirt and capris, again

I am reading … nothing yet today

I am hoping … to catch up, feeling behind lately

I am hearing … very little, quiet at the moment, …. a distant duck ……

I am creating …always something new for my bookstore and giveaways here

Around the house … morning is moving a little slower, everyone slept in listening to the rain

One of my favorite things … my family

menu plan Monday July 26

For my Menu Plan Monday post July 26,

I am adding several more of these new recipes at my recipe site .

It has been so hot that if I ask anyone here what they want for meals all they will say is “Ice Cream”. And since I don’t think we can do that at every meal, it is salad time!

Monday- spinach and veggie salad

Tuesday- chicken pasta salad

Wednesday- squash fajitas

Thursday- chicken salad and fresh corn on the cob and homemade coleslaw

Friday – veggie and rice stir fry

Saturday – easy hot summer pasta

Sunday – we have gotten into this routine of a family picnic after church, I am really liking it!
