For my Menu Plan Monday post Sept 7
We are putting up as much as we can from the garden as I feel fall quickly approaching. This week we plan to can a lot of tomatoes and okra, it makes a really quick gumbo when added to cooked chicken and rice and broth. And even though canned salsa is nowhere as good as fresh we will probably do some of that too.

Monday- big burger cookout
Tuesday- fajitas and salsa
Wednesday- jalapeno chicken and rice and salsa
Thursday- chili relleno casserole and salsa
Friday – stuffed quesadillas and salsa
Saturday – Italian pasta bake
it is time around here to start thinking about stocking up and filling the freezers and pantries, that happens when you live on a farm, we already have several shelves of home canned goods, what have you been preparing?

Your menu sounds very good! So far this summer I’ve canned peaches, blueberries, and chile verde salsa. I’m sure it’s nothing compared to what you have but more than I’ve ever done before.
