We have had the most wonderful weather lately, cooler and not so humid. makes working in the garden and cooking a real joy.

Monday- stir fry squash and rice incredible chicken salad on homemade bread
Tuesday- budget fajitas
Wednesday- meatloaf sandwiches on homemade bread and squash 
Thursday- twice baked potatoes
Friday - jalapeno chicken and rice
Saturday – chili rellano casserole

Your menu looks great, thanks for sharing. I will have to add your fajitas to my budget meals. (I did a budget theme this week as some friends are in a really bad way, financially so all our meals this week are under $1 a serving most 50 to 75c and some of yours look like ones they might can make as well, so thank you for sharing the recipes.)

OMG I can’t remember the last time I had a twice-baked potato. I actually love the frozen ones by Oh Boy…I think that’s the brand
I had meatloaf last night made with turkey meat and it was absolutely wonderful. I hadn’t had meatloaf for so long before that. I plan on making it sometime soon.
