Doesn’t this look wonderful? It is called Dianne’s Cornbread Salad , and if you click on the pic you can find the recipe. I am going to add this to next weeks menu, but we will probably customize it some. I love colorful food and with all of our different colored peppers coming from the garden it makes things beautiful.
Never heard of cornbread salad… it *does* look good!
How timely! I was feeling poorly yesterday, so didn’t check in on my feeds. However, yesterday I picked up a smaller container of cornbread salad at the deli to give it a try since it seemed to be a regional dish. In the checkout line, the cashier shared her recipe. She uses pintos and sour cream with ranch dressing mix instead of the package directions. I guess there are many options.
I think it’s a great recipe for “planned-overs” (making extra cornbread and beans earlier in the week).
