jalapeno chicken and rice recipe

Ok, before I forget. I stood over Georgia tonight while she made this. Here goes. Remember we like it hot and we feed an army (Beau). First she takes 2 chicken leg quarters and either boils them in a stock pot or cooks them in the crock pot with about 10 cups of water. You will need this. Here are the ingredients.

  • 4 cups uncooked rice
  • 1/2 cup diced jalapeno peppers
  • 1 chopped onion
  • 2T vegetable oil
  • diced cooked chicken from leg quarters
  • 8 cups hot chicken stock
  • 8oz shredded fiesta blend cheese
  • toppings of sour cream, salsa or diced tomatoes

Put your rice, peppers, onion and oil in large deep skillet that has a lid. Cook on med high until onions transparent. Add chicken, and stock. Stir well. Cover and turn to simmer stirring occasionally until most of the liquid is absorbed. then leave covered with heat off for another 10-20 minutes. Serve with cheese on top and a dollop of sour cream and topped with fresh salsa or diced tomatoes.  Don’t forget to bless the cook.

got debt?

Well if you are American then you most likely have some sort of debt. And if you have debt you most likely have stress, at least to some extent. Prayer can take away your stress but probably not your debt. I am not here to tell you that you just won the lotto, but I do have some advice if you want to consolidate debt.

  1.  stop spending where you don’t need to
  2. audit your spending, where does your money go?
  3. where can you cut back?
  4. anaylze what your various interest rates are
  5. educate yourself on interest rates available TODAY
  6. investigate a way to consolidate your debt

You may be able to refinance your home at a lower rate, or consolidate your credit cards into one loan, THEN CUT THEM UP! You may be able to get better rates on insurance. Sometimes, in these hard times, companies will actually accept part of your total and then forgive the rest, they would rather you work with them then just bail altogether. Check out your choices. You may be able to get into a credit counseling program or other forms of debt resolution that do not involve a new loan. You will never know if you just keep your head buried in the sand.

Gustav passes, Hannah’s coming

Well, by now most folks are out of danger from Gustav. There are a lot without power and yes some have suffered but not nearly as bad as it could have been. But it ain’t over yet. Was this just a fire drill? Next in line is “Hannah” . We have a Hannah, boy is she something. Hannah means “God hears” and it also means God’s grace”. So God hears and gives grace. We used to call our Hannah “hurricane Hannah” when she was little because when she walked in a room you knew it, but we thought it would give her a complex. She is still powerful though. Come to think of it being completely blown over by God’s grace doesn’t sound so bad does it?

Next in line after Hannah is Ike. Ike comes from the name Isaac and means “laughter”. Interesting season so far. If it would just rain in Tennessee, enough to make the grass grow, and then the sun to shine long enough for us to cut and bale it, then we would be happy farmers.

what would you put on a custom t-shirt?

Last year for several of the birthdays around here we made t-shirts with pictures of the children’s horses on them. I think the shirts were about $8 each, and the transfer paper was $9 for several papers, and then the cost of our own ink, it used quite a bit. They turned out alright but not great. But it was fun, very, very fun.

So this year I have a better option, and it will cost me less. These days a trip to town costs several dollars so as long as shipping is reasonable I come out better buying online. Since everyone loved the shirts so much this year I am going to get some made. You get to upload your own picture, or graphic of your message. Yes you can even make a “vote for Jesus” shirt if you want. Or for your church group, or family pictures for a reunion, or anything else you can dream up. So, if you could get anything put on a t-shirt, what would it be? I would love to hear your clever original ideas. :lol:

she is pregnant – Bristol Palin

So now the big news is that Sarah Palin’s unwed daughter is pregnant. Is that the end of the world? No. Is it punishment? Well if it were I would love to be punished for my sins that way. A child is a gift, a life, a blessing. It is a gift given in spite of us, because we are loved. We are loved when we obey and we are loved when we sin. We are so loved that even in our own selfishness He still pours out goodness. So, yes the young Miss Palin is guilty of sin. Relations outside of man-woman marriage is sin. But there is forgiveness, and love for her. And even though she doesn’t deserve such a precious gift as her child in the womb, the Lord in His goodness is giving her one anyway, may she be faithful with the task she is now being called to. And may the Lord protect her and her soon to be husband, and may He surround them with love and may the American people give them respect and privacy.

And uh, none of us, no matter how good are deserving of a gift so precious as a child, that is grace.

evacuated to where? how about a beach party instead

As I was reading CNN about all of the folks who evacuated their homes I began to wonder, “where did they end up?” I mean we can see what cities they went to, but where are they staying? In some small roomed motel, or a shelter like a gym? I a sure they are grateful for safe accomodations but hey since the gov is such big spenders why not make it fun? I think a family beach vacation at a New Jersey waterpark sounds like so much more fun. It would keep everbody’s mind occupied and they would probably not even miss home.

There are weekly specials and everyone can feel like their money is being spent wisely. So what do you think? The weather on the New Jersey beachline is currently in the mid 80′s and there is lot and lots to do. Wouldn’t that be a lovely way to get your mind off of a storm? Besides having a blast at the waterpark, and all of the great food, and the amusement rides and such, and the great accomodations, what else could you possibly want? Maybe your friends and family with you? Well bring them along. Make it a block party! I’m sure FEMA will pay the bill right?
